立冬補冬補嘴空,到立春前都適合進補。常手腳冰凍的陰性體質者,可以溫補的羊肉鍋、薑母鴨等作食療;若常口乾有便秘的陽性體質,則可用由養陰潤燥補氣的鮮淮山燜煮成的「補氣淮山雞」作平補。

補氣淮山雞
材料
鮮淮山 1/2條
雞 1/2隻
薑 4片
蒜茸 1湯匙
乾蔥碎 1湯匙
AK有機冷壓椰子油 1湯匙
醃料
AK惹味粉 1茶匙
豉油 1湯匙
生粉 1湯匙
調味料
蠔油 2湯匙
胡椒粉 1茶匙
糖 1茶匙
水 50ml
麻油 1茶匙
做法
1. 鮮淮山去皮切塊,放在清水中防氧化。一定要戴手套避免直接接觸鮮淮山,否則會皮膚痕癢。
2. 雞切件後用醃料醃30分鐘。
3. 中大火燒熱鑊下油,爆香薑、蒜及乾蔥,將雞件兩面略煎至金黃,加入鮮淮山及已拌勻的調味料,以中小火燜煮30分鐘,即成。
Braised Chicken with Yam
Ingredients
Fresh yam 1/2 pc
Chicken 1/2 pc
Ginger 4 slices
Mashed garlic 1 tbsp
Shallot (chopped) 1 tbsp
Cold-pressed coconut oil 1 tbsp
Marinade
Vegetarian seasonings powder 1 tsp
Soy sauce 1 tbsp
Corn starch 1 tbsp
Seasonings
Oyster sauce 2 tbsp
Pepper 1 tsp
Sugar 1 tsp
Water 50ml
Sesame oil 1 tsp
Method
1. Skin fresh yam and cut into slices.
2. Cut chicken into pieces; mix with marinade for 30 minutes.
3. Heating coconut oil, sauté ginger, garlic and shallot, add chicken and fry until both side golden. Add yam and mixed seasonings, braise for 30 minutes over medium-low heat. Serve hot.
